Keep them on ice until you clean them. I then put the filets in a vacuum bag and freeze.
When we first started fishing for specks in the 70’s there was no limit. We’d sell them all the time to local seafood restaurants around Baton Rouge.
I was on a charter out on Venice, La. a couple of years ago going after swordfish during the day. A lot of work and technique involved. We hooked one down about 800 ft on a ledge. It shot to the top in what seemed about 2 seconds and spit the hook. We watched him on the top for a while, but didn’t get another bite.

I see you are from the Tampa area. I used to live in Spring Hill and fished a lot out of Hernando Beach and Crystal River. We fished for trout on the grass beds inshore and trolled for grouper over rock piles a little farther out. Good memories.
