Probably because the bullhead lived in the mud and ate garbage!

Called them mudcats that came out of the Red River in Shreveport because they tasted like mud, the blues or channel cats tasted fine.

Actually, they eat about the same things as other catfish. They have softer orangish flesh so many folks dont like them because of that. Not everyone has a ready source of walleyes. Walleys are good but i like a variety. Fish such as salmon, bass, tuna, swordfish hsve a completely different taste and texture from walleye, and each other, but i am not going to turn down any of them!

All cats are scavengers to an extent but blues and flathead less so as they also feed higher in the water column than bulls and will consume minnows, gills, and crawfish, leaving rotting/decaying organic stuff for the bulls 🤢💩 Channels are somewhere in between.

Flatheads. Hands down, any size, including the belly meat. Channels #2, whites next then bullheads. All are good

I agree with NorthMoccasin. That belly meat is to die for. Channels make sure you get all the dark meat off or it will taste to fishy. Never had a bullhead.

I like to filet my fish, wash and rub filets under running water until most of the red(blood) Is gone. My favorite way to cook, make a batter from any regular pancake mix, ad a little garlic salt ,fry in veg oil till golden, guaranteed best tasting fish ever

I'll have to try some pancake batter with some italian seasoning panko added, sounds good, we also like to spice up fried fish with some Jamaican jerk seasoning

Sounds delicious. I love spicy. I lean towards always soaking in milk then drop and roll in the dry mix ( whatever it is ) most definitely always remove darker meat in all white fish meat. I also panfry and do NOT deep fry.

Making me hungry. Bacon is a good thing to cook in the pan with just a sprinkle of sea salt and garlic bread mix. No breading… especially fresh Halibut or Lingcod / Rockfish.

It's hard to beat flathead catfish in the 3-4 lb range, the only fish that may be as good or a tad better is walleye. A lot of the smaller pan fish are also good eating. I usually release other species of fish to try to catch again another day. The other day I saw a 17 year catch a large smallmouth bass, he released it stating he wanted it to spread it's DNA. Thought this was pretty wise for a 17 year old. Nice kid.

Gotcha. My description was for any fish and if any are not as good as you want the milk will suck the flavor of the waterbody or river out of them.

Catfish tend ( like many white meat fish ) absorb the flavor of the lake pond or wherever they reside. Different types of catfish may vary in flavor but more importantly is this fact… they will taste differently pending on the water they live in. I target Channel Cats generally but they don’t all taste the same just like the rest. Blue cats from a pond in Mars County on Planet Jupiter will be completely different flavor than a Blue Cat from a Pond in Jupiter County on Planet Mars. No beer was added to this statement. I hope you got the information you were after. Jupiter and Mars were used as examples. Whatever location is the variable in flavors.

Cow’s milk messes with my hay fever. Would almond, or coconut milk work?
