I cut all the red meat off (fat) cut some fillets out of the flank and close to tail , the back strap made some nice 1" thick x 6" round steaks (apx 32-34) be nice fish sandwiches , also makes great shrimp n catfish couveon . Took those 2" thick belly sections and cut the gray skin off and cut some real pretty 3/4"x5" nuggets . Cut the forehead meat out for catfish soup .
Looking like several great meals there SD... i usually vacuum pack my tunas and such since I am the only one in the house who will eat fish. The wife will eat some catfish or haddock. She likes hers deep fried.
