Hey DB1, Those are Rainbow Trout my friend.

I don't know about WV but in Georgia they would clip one of the rear bottom fins. Just a little bit but enough that you could tell it was clipped (straight cut).

Those are some very pretty fish.
Easy to clean and great taste whether they are prepared Grilled, baked, fried, or smoked.

I believe those are cutbows, which are a cross of a cutthroat and a rainbow. Rainbows are not ordinarily decorated with that blush around the gills, it's the cuts that have that, hence their name. But then cuts don't have that red stripe down their sides like a rainbow. By the look of their fins I'd say were stocked, but not recently. They appear to be in really nice shape. Here in California the stockers have white meat, but the wild trout or trout that were stocked but have lived in the wild for a while, have pink meat. It's their diet. Stockers eat Purina Trout Chow and wild ones eat bugs, worms and other fish.

Same here Spiritof27. Real food for a season or two make their meat turn red like salmon. Wildlife Biologist told me Salmon have red meat from eating Shrimp at sea. You hit nail on head though.
