Fillet, batter in corn muffin mix, fry.

Scale them, cut the heads off, gut them, put your own breading on it, and deep fry them.

My mother-in-law crushes corn flakes and dips them in egg then the corn flake crumbs and it's good too.
If you have some good Gill's then one of my favorites is to fillet them and take a sweet onion and flat slice it, then in a pot or pan, put in an amount of butter. Place the onion and flillets in pot with lemon pepper seasoning. Cook until fillets are white and onions are soft. I love onions, but even those who don't have loved this recipe. The video calls it pan frying, but it is really deep frying without a fry basket.

Bluegill Tacos - My way is a little uncommon. I make fish tacos. I just put my fillets right in hot olive oil and fry em up. Add taco seasoning with a little water and cook it to consistency. You can also deep fry breaded bluegills. I just try to keep it heart healthy. Warm soft shell tortillas, add lettuce, cheese (queso), sour cream and salsa. I really like peach and mango salsa or pineapple salsa. Mix a little sriracha sauce in your sour cream for a little kick. Takes about 5 minutes to make. very simple.
I used to use corn flake crumbs on my fellets and deep fry them. But I switched to Zatarains Fish Fri. It is lightly seasoned and ground finer than corn flake crumbs. I just take damp fellets and shake them in a zip lock bag with the Fish Fri. It doesn't take much Fish Fri per fellet. No egg needed. And it puts a thin crisp coat that is too thin to absorb any oil. Easy and delish. I use it on all my fish fellets. Even trout that are big enough to fellet.
