Here it is. Didn't come out too badly. Hopefully it eats as well as it poses. I spatchcocked a 21 pound bird. The saws-all made quick work of it. Turkey is in the pellet grill.

Did me an 18 pounder the same way. First time trying this way thanks to Spirits previous post. It’s on the smoker now. The leftovers are already destined for an andouille and turkey gumbo.

I've got okra in the freezer all I need is a couple of peppers. Man that sounds good. Wish I could get andouille like you do. Merry Christmas 4. We'll be eating about 3 o'clock or so Fly, come on over. Three daughters and 3 grandkids will be here. We can always make room. I'll be lifting a glass to you all.

Looks delicious,Spirit mine didn't come out so good tried to bake it with pmpkin pie oven was too hot pumpkin pie was good pecan is a little over done won't try that again

while ago, Walmart carries
Aidell's Cajun Andouille Sausage
in the bratwurst/cheddarwurst section; if they're out of those,
you may still be able to find Oscar Meyer Andpiulle Sausage just below it, in the kielbasa and smoked sausage area ! Good luck and happy hunting ! Oh, and Merry Christmas to you and yours !
