Nice job and thanks for the pic. Some good eats there. You can poach those filets over crab boil and have some of the best imitation crab meat. Of course frying is good too.

Thanks. I Seasoned the fish with Salt, Pepper, Onion powder, and Garlic powder and sauted in olive oil. Very good!

Sounds like a quick pan fry but delicious. If you don’t mind me asking, did you have any trouble filleting them? I usually filet them from the tail up.

Fourchon . You just piqued my interest.
I have a friend who has been telling me for years to fillet crappie and bluegill starting at the tail. I thought he was full of it. Have heard from one other source to do this and now you mention it.
I’ve never tried it that way. Kinda a routine thing with me I guess.
What are the advantages of this ???

On the sheepshead the bone structure is such that when you filet from the head down you’re fighting the rib cage a better part of the way. From the tail up the knife rides right up and over the bones and along the backbone where most of the meat is. It’s been a long time since I cleaned any bream or sac-a-lait, crappie, but it may be similar. Hope that helps.

I started at the head. They were a pain to filet but I've never done them before and i heard it was boney. I probably left a little meat on the bones compared to a pro but there is just 2 of us and I got enough for 3 meals.

You are learning already. You can nearly always find those sheepshead up near a jetty, around rocks and especially on a oyster reef
