How do you decide on which color of soft plastic to use?

I’ve been watching a lot of videos and I’ve seen some tips on which colors to use in clear and dirty water but how is that decided?

Imo it’s all based on visibility. If the fish is going to be able to get a good look at the bait before eating it (clear water, sunnier days), you want something that appears natural or won’t throw them off at all. In low vis conditions (dirty water, lowlight) you’re not going to spook them as much having something a bit less natural, so you want colours that they can track easier like very dark, or very bright colours. In general that’s how I approach it, but like anything in fishing it’s not a guarantee and you’ll have days where things appear opposite.

This is probably a dumb question but why can they see dark colors in dark settings?

It’s similar to shadow. Even if you’re in a poorly lit room, it’s easy to see the even darker part of the floor where your shadow is casted. It’s the same idea under water. It can be easier to track and see something that’s significantly darker than the water (like black or a black/blue colour) than something that’s only slightly brighter than the water.

I try to stick to three basic color choices per plastic.

1. A lighter “natural” color

2. A darker “natural” color

3. A black/blue/Junebug/Redbug

The exact colors very depending on what kind of plastic And there are a bunch of exceptions, like for example I throw a lot of pink trickworms and there’s nothing remotely natural about that colorway.

Honestly, green pumpkin and blue black will get you through most situations.

I try to duplicate as closely as possible, the color of the baitfish in the water. Otherwise, my go to color is clear with bright irridescence and streaks of red. Jack crevalle and barracuda are my target fish, but I have pulled in other kinds of fish as well with these colors. Btw, I'm all about salt water fishing and make my own lures.

I tend to do well with purple (dark in stained and light in clear water), brown/green combinations, red (stained water). Sometimes, black blue combos. Silver/black when shad are running. Try Margarita Mutilators by Roboworm in either stained/dark/clear water. Should work.
