Welcome to the Forum, Mark. Well,,,,, I think you are talking about sheepshead, a sheephead is a member of the freshwater drum family.
I have never fished them in the Ft. Myers area but I have fished them in the FL. Panhandle area and all along the Gulf Coast from the Panhandle area to the South TX. area. Not in the LA. area. Live shrimp, ghost shrimp, fiddler crabs, sand fleas, and barnacles are the best bait. They are line shy and hard to catch, except in March during their spawn. Very good table fare. They have a very hard mouth and you will have to give them the heavy injection in order to get a good hook set. It might be best to use a Colorado rig with a circle hook. Of course, you can't set a circle hook. When will you be down there, Good luck!!!!!!!!!!! We love pictures!

Plenty of them in the Ft Myers area but you will have to wait until March-April to catch them when they come into the bays from the gulf to spawn. Pretty much any of the passes around the docks and piers will be good fishing. I did very well at blind pass last spring and all around Gasparilla island was good. 3-5 ft of water and small or 1/2 shrimp worked very well. They bite constantly but are hard to hook. You got to be quick. Fun catching and good eating.
