The taste of Largemouth bass is highly influenced by the water in which they reside. I’ve eaten bass from New Jersey to California and most recently here in my home state of Florida. The best tasting come from deep water like the numerous quarries or “rock pits”. The darker waters of the cypress lakes and rivers and canals, especially if they are shallow, will produce a muddy tasting fish that is darker in color, have higher mercury levels and generally have more creepy crawlies and sores on them too. Clean, light green bass from deep water grow faster and have very little muddy flavor. Great for pan frying like grouper!! Yum
I don’t eat bass because I don’t kill bass for personal reasons. I know those who do and enjoy them. No problem with that. Just not me
Pike, if you clean em right are delicious and free of bones. . There is a technique.
You are absolutely right about perch and walleye. Very good eating. Trout are delicious as well .
Equally , if not close to equally is crappie and especially big bluegill. Fantastic.

Try keeping smaller bass for eating if your laws allow. 12 inch and under are as good to eat as gills and crappie. Yes it takes several of them to feed a few people but they are good.

Bass are best if you don't keep the belly meat, which can be "muddy"
or "fishy". I have found this not to be true of walleye and pike.
Of course trout are way better than bass but even the taste of trout will vary depending on the water conditions. I caught some cutthroats in a volcanic lake in steamboat springs that were fantastic. I’ve also had some stocked trout from the wissahickon river in Philadelphia that made canal bass taste good, lol.
The lateral line on a largemouth is part of the culprit if you were to take just the loin meat it is not too bad I just won't eat them though not too bad is not good enough for me. Small mouth are much better.

Yeah, what everyone else said about personal taste preferences. Walleye and yellow perch have always been touted as among the best of freshwater fish ( don’t get me wrong, I do enjoy them) but I personally prefer crappie and bluegills, pumpkinseeds and such. Also concur with the body of water from which they’re taken

Hey Harvey, back to your original comment, I believe fishermen and women are keeping large fish so they get more meat from them. That being said I remove 1500 -2000 bass out of my lake each year ( 12 inch and under) and fillet them for food and as I said earlier, you can not tell the difference in taste between them and gills and crappie, ( shape and texture may be a little different but flavor is very good if your water supply isn't bad) Try keeping some of that size bass and then tell me I was wrong.
