I'm glad you enjoy them. Maybe RJ will change his tune about those nasty hardhead catfish.
Shoulda told him that it's redfish.
Oh Well, most of the hard head cats I've caught were just small bait stealers. I would usually take the leader and bang them against the boat gunnels to pacify them until I could remove the hook. I would throw them back then. Just Sayin....RJS

Couldn't do that. Redfish, Snook and Spotted Sea Trout are still C&R cause Red tide till sometime in 2021.
I understand. We haven't been as bothered with the Red Tide here. Still have lots of opportunity for all that you mentioned. I no longer have a boat and am about 1/2 crippled, so am not on the water much. My fishing is lakes and ponds to help Jeremiah, my grand nephew learn how to fish. He is 8 and that is a joy.Just Sayin..RJS

Come on and bass don't get worms! I worked on a grouper boat and just gutting them to sell them we would dig out the ones we saw. I don't remember ever seeing worms in the cats I catch.
Well it happens believe me I've fished my whole life they do in salt water

They are flathead saltwater catfish. But the batch that's coming has 1 fillet that's a sailcat.
Sorry, I never heard of a saltwater flathead catfish. Only hardhead sand topsail.

Google "hardhead saltwater catfish" You don't have to take my word for it. I've caught and eaten them for more than 40 years. Only in the last 20 years I've started smoking them.

I don't bother with the slime. I make 4 cuts thru the skin use 2 pair of channel locks. One pair I hold the head from inside mouth between eyes the other I pull the skin off. Starting at the cut behind head and pulling toward the tail. This works for me. Others may nail the head on a board. If you are truly interested pm me and I'll send you pictures. I don't gut them either.
