Taking fish off of the hook.

What kind of dehookers are the best?

Long enough to reach if deeply hooked, not too cumbersome to handle. Needle-nose configuration works well.

If your handy with your pliers this is 1/2 of a coat hanger that works rather well.
Get the hook in the downward loop, twist with a little downward pressure they pop right off.

And it gets in some small openings since it is so skinny.

Small panfish I use forceps, Catfish I use 16” long handle needle nose. I use circle hooks so most of the time they are hook set in the corner of their mouths

I also use different tools depending on the circumstances.

Unless I am fishing in a river I use the same micro light set up light 6-8 # test #2 gold hooks reels with lots of line capacity.

Inexpensive needle nose pliers and 8" hemostats. I also like the cheap leatherman imitations.

Saltwater Sportsman mag. mentioned ARC dehooker! Offshore boats have been using Calcutta Hook Remover type device for tuff snapper and grouper! Got one and it works great, little better than old trusty needle nose plyers! Just use a wet towel when handling fish to protect slime layer.
