Every time I’ve seen someone catch a bass they hold it up by the lower jaw, but with trout it’s a hand on the body. What’s the reason?

Trout have teeth.

Trout have pretty nasty teeth and a weak jaw and lip

Also, holding a fish by the mouth is called lipping it

Bigger trout will even get teeth on their tongues. Plus they don't have the hump/shoulders that bass will get.

When you pinch a bass by the lower jaw it chills them out for awhile. It allows you to usually get hook out. It probably is connected to Central Nervous System and somewhat stuns them temporarily. Trout are a Salmonid. Completely different skeleton and body type.

Supporting it's body while lipping takes pressure off jaw muscles think if someone held you up by the jaw. it'd pull every muscle in that jaw, same theory.
A good friend that works in the Michigan DNR recommends, for bass, holding by lip but make sure the fish stays in a straight vertical up and down line. Puts less pressure on the jaw area or hold by lip and horizontal with other hand under belly. A lot of people, and I've seen it, hold by jaw but hold fish in a horizontal position-huge pressure on jaw area and may damage permanently.
