Needed some smoking material

BUL and I headed to a Pocono trout creek that’s designated as wild trout water and isn’t stocked. Caught quite a few brownies and a rainbow. I believe the rainbow must have migrated from stocked waters although its fins were perfect and flesh a nice reddish orange, usually a sign of one that’s been in the stream awhile. She was the largest and fattest at a hair over 16”, filleted them up and will wait to get another 20 or so before I fire up the smoker. Fun morning.

Congrats bk on your nice catches. I haven't tasted properly cooked trout but it sounds like you know what to do!! Fish On!

I really like them smoked OB, throughout the smoking process I brush maple syrup on the flesh side, really taste great.

Really nice Brad, have your stream cleared up? I am going to give one down here another try on Friday if heavy rains stay away.

Plumb, this is a mountain stream that really never gets “dirty”. No fields or anything to create muddy runoff. Local creeks we’re running like heavily creamed coffee late last week but cleared up by Monday.

No mountains near here other than the ones I see off in the distance. The Little Pike Creek winds through farmers fields and a few towns. I guess the mud is coming from the fields because where I fish I am upstream from town.

Looks wonderful and sounds delicious. I've noticed trout from streams taste better than those from a pond or lake. Do you find that also?

Without a doubt Kandy, additionally, wild trout have a firmer texture and superior taste to hatchery produced fish. Kinda like trying to compare farm raised salmon to wild salmon, they can’t be compared.
