Curious to what folks deep fry their fish in smaller quantities (her and I) and keep it crisp. The one we have must be giving up as thermostat is all the way up but won't get to good temp. Thanks in advance.

I use a black cast iron pan. It really holds the heat well. Oil temperature is about 350°.
Cast iron here also works great and you don’t have to buy an expensive deep fryer got mine at a swap meet for two dollars
I just use a regular skillet on the stove just have enough oil to cover the fish and be sure the oil is hot before dropping the fish in.

I agree, simple is the best way, plus I marry a fish cooker

Cast iron Dutch oven. Gets hot quick and stays hot. 350 degrees. Oh, and happy birthday. Hope you have a great day today.

Hey Mgiven, The best little fryer I have found for indoor frying with very little mess is the Presto Gran Pappy. The unit is tall enough that the oil doesn't spatter like using a cast iron skillet or even a fry daddy. I have purchased them from Walmart in the past for the best price and I found a used one on eBay. I have given them to both of my children also. They work great.
The one in the pics is at least 15 years old and I use it at least once a week. I just fried 2 pounds of bass fillets about an hour ago. Let us know what you end up with.

Thank you for the replies. We also do cast iron on the stovetop time to time. Fry the shrimp with cast too. Usually in the garage on the tripod.
