I am a big fan of Old Town Kayaks, well built and stable. PDL 106 or 120 are both good pedal models.
Mine is just a paddle 106 but next one will probable be the pedal version.
I bought a Brooklyn Kayak PK-11 a couple years back and it’s pretty good for the money. It’s a sit on top kayak and came complete with A reasonably comfortable seat and a trolling motor that drops down in front of the seat. I still had to buy a battery. You can get that same model kayak with a pedal drive unit, which will keep you from having to get a boat registration for it.
This kayak is about 37 inches wide and is very stable. If you outfit it with necessary safety equipment and wear a PFD it’s as safe as any other boat.
