Growing up over the years and doing scuba diving (a very little) has started to make me think... surly going sea fishing and catching fish near the bottom of the ocean and then dragging them up does this not cause there swim bladder to come out of there mouth/ maybe even explode.

Barotrauma starts in fish at about 20 feet depth, but only becomes dangerous to them at around 100+ feet. There are a few ways to revive them as well

Have you seen it first hand then? What do you do if it happens?
Only reason I’m asking is because I’ve recently moved close to the coast and there very little fresh water rivers near. So I’m having to look at other ways of getting my fishing fix

Ive seen their bladder bulging out of their mouth tons of times. It usually happens when you bring them up from depths of 100ft and beyond.
It's so common that in FL in the Gulf of Mexico, the state began to require that you carry a special syringe to poke and deflate the bladders upon release, since common practice is just to pop em with a hook

The best way to return fish that have their bladder sticking out of their mouth is a barbless hook melted into a bigger sinker and dropped on a separate line . put the hook into the lower jaw, drop it into the water. its returns the fish to original depth then just give it a jerk to release the hook from the fish and return it to the surface. I do this on bottom fishing trips where the depths can be u[ to 250 feet. If you throw them back in you're just feeding the gulls. deflating the bladder with a pin or hook etc damages of the bladder and increases chance of fish mortality.
We use something called a Seaqualizer that has settings of 50' 75' 100' 150' that youo hook up to the fish and when it get to the depth you want it auto opens and their bladder is back to normal. We use it a lot on yelloweyes that are illegal to keep. Most ling cod do not blow out their bladder like reds, canaries, blacks, and yelloweyes do.
