I personally like them & that’s a good size. Gill plates, dorsal spines & teeth are very sharp. Take care when cleaning.
These are the sheephead we catch in Wisconsin. They don't have sharp teeth, but can get big and put up a good fight. I love catching these fish.

Fiddler crabs and clam. Bridges, pilings ,prefer older type pilings where tons of barnacles grow, oyster beds reefs , anything in the mollusk fam i guess would serve but think fiddler crabs are best
In SW Florida the best bait working for them is shrimp (alive or dead, even stinky) and fidler crab. Try to use a light rod and smaller hook and watch out for their very light nibble, otherwise they will leave yours hook naked.
