Exotic cheese

Recently I saw a different type of cheese 🧀 that I had never encountered before. It was Darby Sage Cheese.. I looked like a white cheddar marbled with green lines.
Unfortunately I didn't get to try it, but it got me to thinking about exotic cheese, and where else to ask about it? The Fishing 🎣 Stage of course.

My wife was a truck driver that for about 8 years picked up mainly cheese from smaller places around Wisconsin mainly. Many would give her samples of their cheeses when she picked up.
One cheese I thought was really different was chocolate cheese. Just like the name, it was very chocolatey, tasted like fudge to me. Also had the Darby sage cheese once, it was really a cheddar cheese with fresh sage mixed into it before it set up firm, all I could taste was the sage. I even found out that I actually like limburger (spelling?) cheese. There were so many we tasted I can't remember most of them as it was 20 years ago.

A couple weeks ago I found out about a cheese called quark. They use it all over Europe and Germany for eating straight and cooking with it kind of like a Greek yogurt but you can use it like sour cream or yogurt or cream cheese over there they make bread with it, cheesecakes and all kinds of things and you can use this sweet or savory flavor, I put dill in it when I’m going to use it with salmon then I put chives in it when I’m gonna use it on a baked potato, you can put fruit and honey on it and have it breakfast like a muesli super easy to make better for you than Greek yogurt . I just got a cookbook with all kinds of recipes in the ways to use it . Oh and mark your calendar I just found out January 19 is world Quark day. 😂

I love cheese. I like a good Cheddar or Swiss.
Tillamook makes a great white Cheddar.
I like Jarlsberg Swiss or Gruyere also.

Manchego from Spain is IMO very nice. 12 months aged is my preference and you can find it in Trader Joe's.

Every Saturday night my wife and I enjoy cojack cheese cubes and summer sausage while watching old monster movies.

One of our favorite stops on I-5 is the Rogue Creamery in Central Pt. Oregon. Been going there for years, because they do blue chrese better than anyone else in the world, and have the trophies and certifications to prove it. While I really like all of their blues. My favorite is their smoked rogue blue. Haven"t found it ever in any cheese shop other than at the source. It makes an incredible blue cheese dressing too, but my go to way to eat it is just plain

By far my favorite salad dressing is Blue Cheese.
Only dressing that would top it is Roquefort Cheese, but it's very rare to find it and very expensive.

I don't think it's what you would call exotic,but my brother in Wisconsin sends me a cheese pack from Widmers cheese company there. My favorite is their Brick cheese and a brick cheese spread they also make. I can't find Brick cheese here in Cali!
