Snakehead, lightly breaded and fried is by far the best tasting fish IMO. Followed closely by striper blackened on a cast iron skillet on the grill.

Striper, fresh caught but soaked two days in fresh water. Fish rub applied, dipped in melted butter and slapped on a hot oiled skillet for 2 - 3 minutes per side.

Does striper taste differently if it was caught in freshwater or saltwater, or is the flavor the same either way?

Walleye. no bones and the meat is delicious. I cut in bite size pieces, dip in egg and roll in Panko breading. The trick is using lemon pepper. Fry in a little butter and olive oil until golden brown.

Just a plain old Mullet, flour or cornmeal, fried. With a lot of Cheese Grits.

Walleye in my humble opinion is the best tasting fish a person can eat. First I rense off and pat dry each fillet. Then I cover them with flour, then dip them in a whipped egg with just a little milk with it. Next I cover them with a bread and flour mix, (two slices of bread are run through a chopper first until they are crumbs. This should be around 2 cups). With this I have added 2 tsp of lemon pepper, 1 of seasoned pepper, 1 of paprika and 1/2 tsp of garlic salt. I spray a cookie sheet with cooking oil spray with a little olive oil. Lay the fillets on it and before I put them in a preheated oven set at 400 I spray the top side. After 8 to 10 minutes I flip them and let them stay in for another 8 to 10 minutes, depending on how thick and how many I'm cooking.

The same recipe works great with any fish.

From my limited experience, only ate one freshwater, they are the same in taste. For cooking, dredge in flour, dip in an egg wash, sometimes with some butter milk, roll in half pinko and half Italian seasoned bread crumbs then fry to golden brown and crispy.

Oh boy... Where should I start?

Walleye - Beer battered, breaded and fried, or lightly seasoned and grilled.

Crappie, and 'Gills - definitely battered

Salmon and Lake trout - Brown sugar and dill brine, then smoked

Mahi - butter, garlic, thyme, rosemary, paprika, then grilled

Catfish - cubed 1" and battered for bites or shredded and mixed with bread crumbs, egg, salt, pepper, parsley, and onion for Catty Patties.

That's just a quick short list.. 😉
