Nice catch Mark. Specks are one of my favorites too.
To DC- They have a mild flaky taste but should be eaten fresh as the can get soft even in a cooler. When I keep one, it is usuallt not in any shape to be released, sothe I bread and lightly fry them. You should keep them in a live well ot at least away from being compressed in a cooler.
They are very tasty keep on ice or live well until you are ready to
Fillet and cook. They will last 3days filleted in the fridge.
My favorite Way to prepare is after filleting place in zip Lock bags a marinate in your favorite Italian dressing. Two hours or more place on a hot fry pan quickly brown one side turn and brown the other.
Don't over cook.
No oil or butter in the pan the dressing has All you need.
