How do you know “where” to start fishing for carp when you pull up to a lake/pond for the first time - especially a big one?

Stand near an open spot on the bank and look for big splashes. Or walk around the pond and look for openings in the vegetation along the bank. In you're area, you surely aren't the only one fishing there.

In new lakes I like to start where fresh water enters the lake; any channel that forms and go from there.

I'll see what I can find. Thanks.
Best carping for me in Central Jersey is where the bottom isn’t covered with weeds. Sometimes when carp are feeding on a mud bottom, they make bubbles. If you chum the same spot every day, the carp will come to you. Try Peddie Lake.
