I took Fred’s advice and put pineapple chunks and apples along with the onions pieces with the apple juice. The pork loin Coppa I cured for 12 days.

How did it come out Gary? My plan B for Ham is Raisin Sauce (Brown Sugar). It's very sweet but tasty.
