Lemon, butter, salt and pepper, all in the body cavity, wrap in bacon and grill it.

salt and pepper the cavity, fill cavity with matchstick cut summer squash and a little butter.
place on a sheet of aluminum foil, start to wrap the fish, before you seal it pour in a 1/4 cup of white wine.
seal tight and place on grill on medium heat. when you smell the wine (10-18 min) its done.
open carefully it will be hot.
Enjoy!!

Thanks all!!!! Can't wait to try all your suggestions. There are 21in rainbow trout 2 year olds in the next lake I'm going to fish. A lot of meat on these fish so the lemon/ white wine should make these lunkers taste great!

you can put pretty much put what you want in the cavity, peppers, onions, carrots, cukes. I sometimes add some celery seed to the salt and pepper if it's a large trout (18"+) note the white wine should be a dry one not a sweet. I use pinot grigio.
