Got out with a new fishing buddy that lives 10 minutes from here, good news on the propeller front...no cavitation when turning with it trimmed way more than I ever could before. Speed really good with a 19p 4 blade at 5000rpm and 45mph. If the dealer can get me the extra throttle that's missing this should be WOT at about 5500rpm, and the mid range cruising speed is really good at 35mph at about 3500/4000rpm.

Oops, my wife called me front and center for a few games of pool before we cook that fish

If you can't get full RPMs @WOT, your pitch is too high. Try an 18p or 17p even. Otherwise you're putting too much load on the motor.

You've missed the part I've been explaining where something is set wrong with the throttle, I have been down to a 15p and the most the engine would go is 5500 rpm, there are throttle adjustments that can be made that would give the engine full 6000rpm, 15p = 5500rpm, 17p = 5500rpm, the 19p is down to 5200 at WOT, which is telling me it will probably pull around 5600 which is more in line with where it should be. Both Mercury and the dealer say the engine should pull 6000/6200rpm with the 17p prop, about 5600/+ depending on the prop with a four blade 19p...three blade will be up a couple of hundred.

As long as the engine will pull mid 5000rpm it's in the correct zone...the mercury tech says it needs to be adjusted so it can get to full rpm, and told me to have the dealer reach out to them if they can't figure it out.

I've re-propped a few boats over the years, inboards, sterndrives , and outboards, so I'm familiar with the pitch/rpm relationship. I must have missed the post about you not reaching full rpms, even with the lower pitch prop. Hopefully your dealer mechanic can straighten out the throttle calibration. Good luck, and let us know how you make out.

It's been annoying the heck out of me not to be able to get over 5600rpm with any prop, it's how you gauge the right pitch.

This stainless prop has absolutely zero cavitation like the Mercury aluminum one did, it's also faster at about 5200rpm than the aluminum one was at 5600

I think you're going to enjoy the SS one once you can get the motor up to full RPMs.
