Double smoked Ham with a bourbon maple glaze

This was a 15 pound ham double smoked using hickory and cherry chunks. This was for Easter. Can definitely taste the cherry flavor.Also added my smoked cheese and smoked some cream cheese. Did get a picture of that though.๐Ÿฆ…๐Ÿ‡บ๐Ÿ‡ธ๐Ÿ‡บ๐Ÿ‡ธ๐Ÿ‡บ๐Ÿ‡ธ๐Ÿฆ…

You're killing me. I just ate a tuna sandwich for lunch. Looks great. I see the onions in the drip pan below. Have you ever tried adding pineapple, oranges, apples etc. to the drip pan and let them simmer and steam the meat? I do with turkey and chicken and it really turns out well.

If you would rather, use fresh fruit juices. They are already in the liquid stage and will evaporate quicker. We always have fruit on hand and just choose to cut them up and put them in the tray. I alos add the onions like you along with celery and garlic and other spices.

Thanks for the tip, GT50--I was wondering how you kept it from drying out. Just picked up a bag of apple chips. Attempting brisket this weekend.

Put the ham so the cut side is down. If you put it on the side it will open up and dry out. Thatโ€™s experience on my part. I love brisket and do mine hot and fast๐Ÿฆ…๐Ÿ‡บ๐Ÿ‡ธ๐Ÿ‡บ๐Ÿ‡ธ๐Ÿ‡บ๐Ÿ‡ธ๐Ÿฆ…
