Awesome! How did you roast it? I’d love to do that, but I wouldn’t have a clue how to go about it. That doesn’t look like you buried it in a pit.

I used to barbecue whole hogs in a pit never tried one on a spit

Awesome looking Porker Jimmy. We have a couple guys in town with big Smoker / Roaster trailers. When we have a big party, just call one, and they'll come over, setup, and roast them all night. They come out fantastic. I've been known to sneak in and carve out a slice or two, when they're almost done.

Fred, when the kids were little they were summer club swimmers. The mananger of the pool used to do that. Called it squeals on wheels

We didn't do this one. Usually we make a full dinner but decided to cater this time around.

If they know what they're doing, and are willing to sit with it all night to keep basting it, they come out perfect.

It really looks good. I’d love to give a whole pig a try sometime. My wife doesn’t muck like BBQ, so I very seldom get to even break out my smoker.
