Visiting Gulf Shores, AL and planning to go fishing off the pier at the state park. Looking for advice on what bait to use and rigging to use and depth to fish spanish mackerel and flounder.

For mackerel I would use a 1/2 oz chrome spoon, go to Walmart and get 3-4 Tsunami 3/0 spoons.....cheap compared to Clark spoons, and just as effective. I don't fish for flounder, so can't help on that

For reds on a pier I'd use pinfish on the botton unless they are thick around there then it probably won't matter what you throw out there. Keep in mind pier fishing is not for light rigs/tackle. To be successful you need some stout gear. Even for mackerel I use a 9ft rod, Daiwa BG 5000, 65lb hi-vis power pro mainline, and 30lb leader. Don't need 65lb mainline but it just holds up better for me. I know you're just visiting so don't go crazy and buy a load of gear, just take those spoons out there and have some fun......and come back soon
