My dear wife Marion, informed me that she was all done canning. She was diagnosed in Sept with stage 4 lung cancer in Sept of 2020, so, no canning that year. No canning in 2021 because she was still trying to beat the cancer. She is in remission now, but her kidneys are starting to fail her, but she thought that she would try it. I helped her as much as I could, she had to tell me what to do. She has trouble lifting a 1/2 gal. of milk, much less a canner 1/2 full of water. She was able to finish 4 qt. of juice but that was it. I guess we will have a lot of tomatoes to eat this Fall.

Fly... First, I sympathize with Marion's plight, and wish you both the best under the burdens you are having. I've got a couple of ideas about how to use the extra tomatoes:
1.) If you have a farmers market close by, try to get a vendor there to take your surplus to sell on consignment, split the proceeds, and donate it to medical research ... or
2.) Donate them to a local food kitchen.

God bless your wife with her struggles with cancer flyguy π for her and you buddy! We have the best bumper crop of tomatoes we've ever had, we have frozen many cherry tomatoes we made marinara, spaghetti sauce and stewed tomatoes that are the bomb in many recipes and huge crop's of zucchini and squash frozen too. Definitely a money crop when you see the stores prices of $5 to $7 for a little package and the taste of homegrown much better.

Thanks for the thoughts, prayers, and ideas guys. Our neighbors all have big gardens and all of the tomatoes that they want, so, I think we will peel and freeze some and give the rest to the food shelf.
