My very favorites Huntm, those backstraps and the fisher loins on the underside are simply delicious. Love to prepare our own, you know what you’re getting and take care to do it up right. Too many butchers down here don’t provide your personal deer and I certainly don’t want someone elses gut shot deer.

I bone all my venison
The deer 🦌 here eat alot of sage especially on the coast in the foot hills.
I'll wipe the body with vinegar water mix after the hide is off then qrt. It and wipe the qrts. again to make sure the all the hair is off the meat 🍖. Let the meat hang in a refrigerator we have for 2 to 3days and then bone it.
I'll bone the neck , for a neck roast. I do not keep the ribs not much meat on them.
Your guys Whitetail are bigger than are California deer 🦌 the biggest one I have killed went 170lbs
Are average is 90 t0 110 lbs.
And your 🦌 taste so much better.
My son has killed white tail back East on his buddy farm 🚜.

Thanks for sharing it. That’s a good buck and he’ll even be bigger when his antlers are done growing and he rubs that velvet off. Cool picture 👍
