Thanks Cat, Will eventually get my computer fixed so I can post pictures. Some of you have tried to help, Haven't worked it out with my search engine yet.

Oh my, I can smell and taste them here in Pennsylvania. They look like smoked perfection!

Oh my...a feast fit for royalty! They look mighty delicious! A buddy of mine that still lives in Alaska keeps the "bellies" of his salmon and includes them in the smoking process. That idea was a new one by me, and I was skeptical about it...thought he was pulling my leg so to speak.

After he shipped me some to try I had to admit they were pretty tasty. Here in Michigan we had always been warned about the potential for toxins being stored in the fish belly fat so we never ate any of that meat. The main concerns were mercury and PCB's. I would imagine that the ocean run salmon come from better habitat in terms of water quality.

Has anybody else kept the belly strips for smoking?

I keep the bellys off the Flat Head Catfish I catch. Best part of the fish. Don't have no salmon down here.

Funny how many people throw away the best part of so many fish. I fillet lots of salmon here in Riggins and nobody wants the belly meat. That’s the best part of the fish. I also scrape all the back bones and nobody wants to keep that either. There’s a 1/2 pound of really nice, completely boneless, meat on the back bones. We cure it, smoke it and make salmon chowder and smoked salmon cheese balls out of it. I really don’t have to go fishing where I work to have all the fresh salmon I want. I’d call that a benefit at work👍

Oh yeah. That’s where most of the healthy oils are. Up in Alaska the women won’t part with the belly meat. They’ll stick a fork in the back of you hand if ya reach for it😆

You are 100% correct about that! The friend I mention was a workmate that fished with me together back in the early 80's after we both had moved to Anchorage. I stuck around for 3 years but he stayed for keeps. His adventures always tempt me to return for at least a vacation! Perhaps I will someday, although he tells me that all of the favorite places we used to explore are now over run with too many people and not enough solitude.

Sadly, his wife passed a few years ago but his children and "grands" keep him busy on the waters going after anything that will bite a hook or get caught in a net!

Once you get used to the annual cycles of living in AK it is a wonderful place to be if you enjoy the great outdoors!

Thanks all. Bellies generally have more fat. Nice if fish big enough to have some thickness. These Coho aren't as thick and fat as Kings which I would rather have. Was trying to make room in freezer. Son and family coming to take me to Westport for two days of Salmon fishing with one day a combo trip bottom fishing too. Normally we go for 3, But they need to get back to Cal because of Grandson going out for Football.

I know my buddies up there sure like it. I love the great outdoors but that’s a little too far outdoors for me now. Lol They’ve been up there since the Val Des spill so that’s been a while. I’m usually about over it after 10 days on the water in October and November. I really need to go up there during the summer once and check it out. My buddies are all commercial fishermen though and they’re gone from May through September. I had a good friend that was a local charter captain but he passed away from the covid shot last year at 42 so he’s not there any more☹️. I could have gone with him any time I wanted to go up there and I did several times. I was with him when he got that shark. That was a trip to remember. That thing attacked a 30 pound king right at the boat and Josh saw him coming. Bad choice for the shark. Shot a harpoon in the side of his head and finished him off with his AR💥. The harpoon was tied to the boat.

Tough choice what to like best here. Fish, AR, Boat, or all the reels up top. I will get back to you. Great pic by the way.
