What aspect of fishing do you think is severely overcomplicated or oversimplified by most anglers ?
I've been fishing constantly as long as I can remember. I’ve jumped into every category and method of fishing I could get my hands on.
Now Im putting probably 14-16 hours a week out on the water. I’ve seen a pattern in every type of fishing where there is a happy medium between excessive gear nerding, overanalyzation, etc and total simplification and tradition, where I’ve been able to make the most of my time, efforts, and money.
What are some of the things y’all have noticed along those lines?

In my humble opinion, Fly Fishing, the gear, the 'mantra' and all surrounding this part of the sport is over done. Just Sayin...RJS
One important thing about Fishing is casting where you want it to go.
Second is having the fish take it. LOL
Having fun while fishing is really the most important thing of all. IMO

I once had a boss that thought if you were not fly fishing you were not fishing. He “taught” me to fly fish. I went with him only a couple of times. He was a pain in the a$$ to fish with. However, my best story fishing with the “ master” fly fisherman was our very first time out. I actually caught a rainbow on my first cast with a fly rod and I caught three that morning to his zero. I know it was luck but still a lot of fun.
I believe fly fishing is made over complicate. It is one of the most enjoyable ways to catch a fish in my books, but it is not a sport of the gods. It is just another approach to presenting ultralight, often floating artificial bait to a fish. I know of many fishermen who are steered away, due to the mystique and false claims of difficulty. Don't get me wrong, fly fishing is as simple or as difficult as you wish to make it. It also has the side benefit of making your own flies. It is like drinking wine. You can just like the taste or you can get deeply involved in the ambiance of the tasting room, social aspects and rules about how to hold you glass.

Good subject on fly fishing which i have never tried.
However i wonder if a flycast line could be tied onto a spinning reel with a dry fly at the end and fished in the same manner?
just thinking...

It could, but very ineffective, as the whole principle of fly casting is a balanced weight and stiffness between the line and the rod. If you want to use a spinning rod with flies, I highly recommend using a weighted float and fly. It can be very effective.
If you take a fly rod and some small Bass poppers, Go for Bluegills. Half the time when they hit it is not in their mouth. And pulling them in by hand is part of the fun. Catch and Release. At least all the small ones. When I did it I used some 8 LB Mono for a leader for the fly fishing line.
