Ever try walleye cheeks?
Like the fillet mignon of fish.
Next time you are cleaning a walleye, check it out.
Nice little nugget of meat on the side of their face. Carefully Cut these out with a flexible blade. Remove the skin and you are set.

Takes a bunch, but it’s a tasty treat from something that would otherwise be scrapped

I’m wondering if other fish have these? Never thought about it before.

Absolutely! They are definitely the best part of a walleye!

Never had walleye cheeks but I'll put halibut cheeks up against them anytime.

Striper and bluefish cheeks are pretty darn good, kinda like scallops.

Yup. The lingcod in my avatar had them removed and they were really good. The funky thing was the guy filleted my fish and removed the cheeks after he put them on the table with my fish both cheeks flexed in unison laying on the table. Kind of freaky.

Top right in pan and bottom center of pan are the cheeks of Ling. Oh so so gooooood.
