Salmon patties and good Mac and cheese is one of my all time favorites
Wife was raised catholic snd wouldn’t touch one with a stick . Having grown up eating them at least once a month all her life.
I always use canned pink salmon
Saltines , raw egg , diced onion and salt and pepper.
Anyone use fresh and how do you make it?
Would love to hear some good recipes , as it has suddenly become Autumn here in Ohio.
And stick to your ribs kinda dinner is what I’m craving.
My mother cooked salmon patties when I was a kid. We here never having fresh salmon but only canned. I doubt there had ever been a resh salmon within 1,000 miles but we loved the canned. Just Sayin...RJS
I use cheese crackers in mine and freshly minced onion.

Its TOO late for dinner buddy. Some dark chocolate and some milk maybe....
The salmon patties alternated with canned tuna casseroles and fish sticks on Fridays for our family. That was the Catholic way. Back then fresh fish was at expensive restaurants. And we lived in SF!
I would just salt the fresh salmon a bit and use it. May need to steam it with some salt to make it similar as canned.
I like spicy so I would be using some spicy chips or something in the mix or maybe just add some cayenne to yours...the cheddar crackers are very good
I smoke sockeye salmon I bring back from Alaska. We make salmon patties with it. Pretty good.

Good morning Mr. Bragg, I like to use fresh salmon cut into 1/4 inch pcs one egg 1 Tbls each red onion, jalapenos, whats this here sauce, [worcestershire]. 1/2 tbs creole mustard, 1/2 cup mayo, a dash or 2 oldbay seasoning, salteens, selt and pepper to taste. patty up, cover with panko crumbs. pan fry in equal amounts of butter and olive oil. ENJOY You can kiss me later

I smoke the backbones after filleting the salmon. Then take the meat off the bones. A 30 pound king will yield a cup of meat off the backbone. Mix that with diced onions, diced red bell peppers, seasonings to taste, an egg or two and flour. Makes a couple of decent sized patties. My Mom would just mince up the smoked fillet and get as much as she wanted depending on how many people were gonna be there. Fresh works the same way. Except you need more of your favorite seasonings. The smoked fish is already seasoned pretty well.

My Mom would make salmon patties the same way but mostly we had cod and sea bass from the freezer. I between would be Irish spaghetti, pasta with tomato soup on it.😆😆
You guys in Salmon country are fortunate to have such big fish in such profusion. Just Sayin...RJS
