We been catching a lot of bows in the black hills and some of them have really red meat so I'm just wondering if that's normal

it sure is. trout are a member of the salmonid family, you catch one that red (they taste better) and they are either native or holdovers. nice looking fillets!

Red meat is an indication that the fish are not fresh "stockers

The re flesh indicates that they aren't recently socked hatchery fish and can be attributed to a diet of scuds and freshwater shrimp

As others have said, stocked trout have white meat, presumably from the water where they were raised and their diet of fish pellets.
Where in the Hills have you been catching them?

I believe it is as a result of there diet which includes a lot of scuds and other shrimp like critters. Same with salmon. It's why they have to put fine print on packs of farm raised that says artificial coloring added.

It looks like they like Crawdads & snails. the crustation shell is what gives Trout their red color. The planters that haven't been in the lake very long will be more standard whitish meat.

I always though the red meat is a reflection of their diets. Some nativeRainbows I have caught in different streams their filet colors ranges from white to pink and en the bright orange.

That would be normal a l. Different streams have different populations if insects and crustaceans. Different food Different color meat.
