I’m a complete newbie. I’ve only been fishing twice before in my life. I am enjoying it and stocking up on gear. Any recommendations for a simple but quality knife? I don’t mind paying for a good tool. Thank you.

If you’re talking about a fillet knife I’d suggest a Rapala, they don’t get much better for the money. Around $20, I’ve had many for years of good service.

You're going to lose it (trust me) so I wouldn't spend too much on one. You can get a filet knife at Walmart (Ozark Trail) for less than 5 bucks. If you're looking for an every day carry knife you're gonna have to pay way more than that for anything decent. Look into a Leatherman multi-tool. Very handy for fishing and for just walking around through life. I don't know how I ever lived without one.

Rapala is a good knife, but I prefer the Chicago Cutlery Knife @ about $20 at Walmart. Thin, flexible, and long with good quality steel to hold an edge.

The key to any fillet knife is keeping it sharp. Whatever brand you purchase, make sure to get a good sharpener also.

You said you dont mind paying for a quality Knife? I suggest the Bubba Blade Lithium Ion cordless Rechagable fillet knife,,, I absolutely love mine... They will run around $85-$140 depending on where you puchase.. I picked mine up on ebay at the lower end... Trust me on this, if you catch a lot of fish on your trip ,a quality electric Fillet knife will make quick work of your catch and cut your cleaning time down drasticly. Ive been fishing and cleaning fish since i was about 12 years old and now being almost 60 I have a few years experience on this subject. check this link out for more info on this blade... https://www.walmart.com/ip/Bubba-Lithium-Ion-Cordless-Electric-Fillet-Knife-4-Blades-Li-Ion-Fishing-1095705/691227378

Check out Camillus knives. I have had mine for about 30 years and still looks and sharpens up like new.
Also pick up a great sharpener in the Edgemaker Pro, American made with a lifetime warranty. Check out their web page.
