beach of a day 8/9/21

A few days late in posting, Had a fight with my computer......the computer won!
Had an amazing day on the surf, it appears the fishery in the TX Gulf is starting to be productive again.
Didn't have to cast far, approx. 30 to 40 yds from shore, to middle of the 1st trough on outgoing tide.
Caught several of both and some cats. Kept these 2 and released the others. Used live shrimp. Didn't take pics of others, was afraid keeping them out of water too long.
Red Drum. Appox 6 1/2 lbs 24"
Speckled Trout. Approx. 6 lbs. 23"

Drove about 10 miles North of where people hang out, had the beach to myself. Couldn't ask for better.

Padre, i have seen them on the menu when i was in NC but never tried them. I have made trout cakes instead of crab cakes is the closest i have come to mixing it up with fish meat.
What else goes in a fish taco?
