My opinion: Trout are perfect just gutted and gilled. You can do that with anything.

Go with the dexter, I had one for years. also, learn how to sharpen it....and keep it sharp. It's sooooo much easier with a sharp knife.

I got a filet knife at Ikea for pennies on the dollar.
No sheath, so it's a home item, but it was damn sharp and cheap enough to ultimately be disposable.

Any crappy fillet knife can cut just as well as an expensive one, it's just that they don't hold their edge as long.
That being said, fillet knives are only used to cut fish meat; which is very soft. So even a cheap one will be able to fillet dozens of fish before needing sharpened.

Buy the lansky sharpening system and any knife you like will do. The amount of flex isn't as important with trout. Also, you linked the Victorinox boning knife, this is the filet knife. Looks good.

I use a kershaw adjustable length filet knife. Works great for trout, crappie, catfish and saugeye.

I like the Bubba. I am not sure if I paid for the brand or not, but I needed one in short order. Its comfortable and comes pretty damn sharp. The key with any knife is maintaining the blade obviously.

I haven't kept a trout in 60 years but when I did keep them I just used a scissors to gut and gill them on the stream bank. Why would you want to keep them and why would you want to fillet them if you did keep them?????
I stick with Rapala knives! Dexter commercial knife needs sharpening before filets finished, got two white handles knives dull and out of use! Victorinox looked good. Used many knives and will stick to old school Rapala with black handle. Out of stock but they make a Rapala4 Soft Grip Fillet knife and Rapala 6-Inch Fillet Knives to 7-1/2" These baby`s hold an edge better than Bubba Blades big buck knives. Forgot about Uncle Henry filet knife, holds edge but stiff no flex with nice bone handle. My second go to knife.
