Some simple things can be made difficult. I just leave my hands on top of the steering wheel and simply "chase"
the trailer out of the mirror by turning the steering wheel into that mirror if the trailer if filling too much of that mirror. Instead of a partner targeting you with hand signals, simply have him stand where the tire on that side should go. Then you just "chase" the trailer back and forth using the mirrors to line up on his feet.
