I would have a hard time letting the Leinie's Summer Shandy get past my lips to make it to the fish!
MMMMMMM - that stuff is pure gold, but that sounds great!

Yea grilled walleye is one of our favorites
To go with it , steam zucchini in a foil pouch
Slice zucchini into 3/8 inch slices. Skin on . Put it on double foil
Pour on a little white wine for steam , toss slices with Montreal steak seasoning. And top with a couple pats of butter . Wrap it up tight in foil
Put on grill indirect heat 10 minutes before the fish . Scrumptious. !!!

Always been my opinion that if you have to do a bunch of stuff to it to make it taste good its not worth eating. Walleye is definitely one of the best tasting fresh water fish i know of. Just coat it with your favorite breading or batter( i prefer Zatterans) and fry at 350 till golden brown and enjoy. No way I would smoke an entire catch of walleye.

Ever thought about pickling them. Did this with some fish and I really liked it on wheat thins for snacks.

When I was a lad , knew some neighbor people I used to play with their folks picked suckers .
Like lots of jars of suckers. Probly 100 or more
I spent time at their house when this was going on. And given tasks , just like my friend did
Apparently certain times of the year , suckers swim upstream by the thousands. This was the little Scioto river approx 12 miles up stream with. Influence with Ohio river
Uncles would sein with a big net about a 5 gallon bucket full every pass
12-14 inch suckers..
they would bring en home , prep them then it was up to womenfolk and kids (me) to do the processing. From what I remember there was a nine picking operation ( me) brining operation , and a canning and pressure cook then seal.

Gotta tell ya. , waiting at the buss stop with my buddy in the snow that winter didn’t suck as bad while eating a warm biscuit ,pickled sucker and a slice of velveta

Hey KB, If you are smoking some of your walleye catch, it would be excellent in the recipe I use for smoked trout dip from Gaston's Resort in Lakeview Ar. I have also made the dip using smoked Whitefish and it turned out great. My favorite recipe is a deviled Walleye that I found in Field and Stream that is fantastic. Here they all are the deviled Walleye recipe is on both sides of the 3x5 card. It is a fairly easy meal to make. Have fun on your outing,that is on my bucket list. And by the way...I do love it breaded with Andy's Red and fried.
I also added my smoking brine recipe.

Just to clear up the Lake Erie Is. Put in Bay
Is a town on South Bass Is. there are three Bass Is. south Bass, Middle Bass and North Bass is. If the point you were looking from was Catawba point, just behind Mouse Is South Bass Is along with Green Is Kelly’s Is and Middle Is would be visible on a clear day. Many many places the charter guy could have been pointing out. This time of year the Bass Is are somewhat productive but not hot enough to get charter guys attention. Just trying to clear up the area for you, not trying to be a smartie pants.

Now that will make ones mouth water MAS.

On my barely legal trout i have made trout cakes. Same recipe as for crab cakes but a whole different taste.
