I’m getting married this spring and would love to make a good gift for my best man who got me into fly fishing. We’ve talked about heading out to NC, but would love to try a guide and make a fun camping weekend of it. We aren’t sure where’s best to get bigger trout and who we should contact about helping us on that. We would be able to fish over the summer, but also into the fall.

https://www.ncwildlife.org/Fishing/Trout-Fishing-MapsI tried to open that on mobile and it locked up, not sure if you'll have better luck or not with it. I use a similar one in Virginia and it works really good for finding at least department owned and natural trout streams/lakes.
See if there are any fly shops down there, a handful of the ones up this way offer suggestions and guides for how to plan your trip.

If you are wanting big trout, Cherokee trophy waters is good. You might also check out Thunderstruck lodge which is private water, but large very fighty fish.
