Why is it not good to fish in the middle of the day? I do decent in the evening but never good in the middle of the day.

Because that's just how fish are. They're more active early and late in the day. You'd need to ask an ichthyologist psych doc why fish do what they do.
Sun is overhead illuminating the water to a greater degree thus making a fish easy prey for ospreys etc.
Ah, the birds and the bees. Probably so. I've seen those ospreys and eagles at work, and I'd stay inside too if they were lookin for me.
You can can catch fish in the middle of the day if it is cloudy, a bit of a breeze rippling the water, shadows from hills or trees, etc. clear sunny days keep the trout down for their safety.

And another thought. You go out in the middle of the day and there's say, a mayfly hatch going on, and you throw a mayfly pattern out there, you're gonna catch some trout. High noon or not.
