Does anyone have experience with a 1WT rod and could recommend some?

I have one. Also have a 0 and 00. My 1 weight is a 6 footer. Use it for small back country creeks and beaver ponds. I have an echo... shit... can’t remember the model. I giggled a little when they sent a reel with it pre-loaded with backing.

Catch a 6 to 8 inch fish on a 1 weight and you are fooled into believing you have a 20+ inch fish on the other end.

I sometimes fish an Orvis Trident 8' 3" two weight, and have caught hundreds of 4" to 15" brook trout in small streams just outside of Yellowstone. These are free flowing in places and have beaver dams in others. I once tried a friend's one weight, and I'm afraid I could not tell much difference in the rods, but the one wt has slightly less line drag when you are hooked up.. They were both a lot of fun. I can see why you might giggle at backing on a small stream one weight, but ..... :
the backing gives you a little larger arbor, so less cranking;
I would use it in some small mountain lakes,and occasionally I would run into a 16" + cutthroat or cutbow,
and once I got surprised by a huge brook trout on a little streamer, and then backing was good!
One quick question -- do you use a double taper or weight forward on your one wt?
