I have had luck in the past with Chicken Livers (just careful to bait it right or else it will fling off). I am hearing from the locals where I live that chopped up hot dogs and kool aid (mixed together) is a delicacy for catfish. I have yet to try it... ;-)

I use elastic thread and bundle it all up on the hook.

I was fishing for striped bass last weekend and the only thing that got even a nibble was chicken livers. (I never did land one, though.) I also tried bloodworms, frozen sardines, and lures.

Yeah I've caught a ton Of catfish on stinky chicken livers I let them sit in the sun and rot a bit before I take em out then put it in panty hose over a treble hook.

Really fresh livers are softer and don’t stay on the hook well. I usually buy them a week or 2 before I use them. My buddy uses some sort of thin cloth bags the liver in that then throws it on the hook.

Soak your chicken livers in salt. It toughens them up. You can also tie them in a small square of fabric mesh and then run your hook through it. I fish catfish a lot and have been having good luck with chicken breast cubed and seasoned with strawberry Kool-Aid. It toughens it up and dies it red. I keep it in a zip lock bag. I use 2 packages of Kool-Aid to half a quart bag of cubed chicken breast. It stays on your hook!
Use panty hose pieces to secure bait or cheese cloth!
I lived 15 years in Savannah, TN; catfish capital of the world. Almost everyone, including me, used chicken liver or shad guts catfishing. It was very effective. To keep it on use rooster liver or pork and beef work well also. If legal, use pieces of pantyhose to hold liver; if not, then use a rubber band. Use treble hooks. I have found gizzards work well also and brother, they're tough. I usually put some raw liver into the food processor and liquified it, soaked gizzards which I had beaten with a mallet in this and placed it in the sun awhile. Stinks like hell, great bait though and very effective for big cats. I have caught many 30lb or more with biggest being 46 lb.
