I’m going to try fishing at night from the docks here in Stuart Fl. Any idea what people catch at night?

Folks catch all kinds of things at night, at least they do in California. A lot of em you want nothin to do with. Be safe! And catch a lot of fish.

If there is a light on the dock toss where the light illuminates the water. Best fishing times at night for me was just before the sun set and once the evening set in.

Jig the pilings and boardwalks with your favorite rubber baits. Sheephead and flounder hang around them.

Snook love docks if they have lights, but if you see them in the lights they will not take a bait. Fish the shadows with free-lined shrimp. Big Mangrove snapper hang around docks as well. I've never caught a Sheepshead at night. I do not recommend light tackle around those pilings as you will need to horse those suckers out of there

Crabs
Crustaceans
Other predators
Reccomend well lighted with others till you get your feet wet.

dont forget to try a glow in the dark lure....can "charge" them with the light from your cell phone or other flashlight, etc.
