Everglades Breading

I bought some of the Everglades breading mentioned here, no directions on the 3 lb. bag. Do you dip fillets in Egg first ? How is it used, none of the stores in town carry it so I can't just look at the directions on a 1 lb. bag on the store shelf . I bought mine on line .

Milk and egg bath, dredging in batter into the frier, Oil or air frier. If you use an air frier 15 min on 380 or in oil till they float.

Same, except I use buttermilk. Never really compared with plain milk. Mother, wife, grand mother’s and M&L used buttermilk, and I was never curious or inventive enough to change. They also used plain ole corn meal with salt& pepper.
