Smoked drum fish recipe?

Anyone know of any brine recipes for black drum fish. I grew up in south jersey. People used to smoke them for my father but not anymore. Thanks -jim

Monster, can't help you on smoking but have you tried a blacken recipe instead?

No, we just baked it with tomatoes and garlic . What do you add to blackened it.

Hit the internet. You will find lots there. Word of caution, be careful with the salt. It is easy to over do.

I smoke mullet with a mustard based basting. Comes out really good. I get from internet each time I use.

Never caught or smoked Drum however standard fish brine should work. I use 1/2 cup Morton's Tender quick 1 Tablespoon each of Granulated garlic and dried dill in a gallon of cold water. Soak overnight or up to 24hrs and smoke.

Try 4 cups brown sugar and 1 cup kosher salt for 24 hours. Then rinse well before smoking!

Hey Monster, this is my recipe I use for smoking trout, you may give it a try.
I use apple wood for my trout and pecan wood for Whitefish.

You might try using a dry brine. 3 to one, salt to brown sugar and any spices that you desire Layer dry brine, fish, brine, fish, etc in a 3-4 gal ss stock pot 4 hours, turn all fillets it will be quite juicy by then set overnight in fridge or cooler with ice, pull out, rinse well and smoke. You can reverse the amounts of salt and b sugar for a more candied fillet.

Thanks, looks good. We used to also have Atlantic mackerel smoked. I just don't hear of them coming close to shore anymore

FYI, Spanish Mackerel are a prime surf and inlet catch in Florida in warm weather would be a good smoked candidate just keep fish on ice immediately.

We catch some in August and September. I I'll try it thanks
