Marinate 2.5 days. Put on grate pat both sides with paper towel and let set for two hours outside. Put in smoker at 200 or oven and check at one hour and 45 minutes.

Wow that looks good. I have made similar Jerky only used Morton's Tender quick which has #1 cure in it. Also just tried a new recipe for beef jerky. It's really simple and saves the whole curing/brining process. Buy raw uncooked Corned Beef slice and trim to your preference and smoke. I've tried it and it is remarkably delicious.

Hey Dozer, I've been meat smoking and making jerky for over 45 years. I've just about tried every way you can think of. I read about making corned beef jerky about six months ago and was skeptical. Once I tried it I was convinced. I did trim off excess fat and sliced like thick bacon and smoked it. Easy and delicious!
