The Fishing Points app showed the highest fishing activity I've ever seen on that thing. Maybe its the super moon. Anyways, we were out for a hike and stopped by a small lake in White GA. Fish were literally jumping. What kind of freshwater, not just strike the surface, but jump out of the water? From what I understand, there's just crappy and a few small bass in there. Do they do that?

If there is a good insect hatch they may, but that may be limited to the bass. Cannot say I have seen a crappie do that.

The only fish I've seen broach like that is Carp, J1F. I've heard a couple reasons for it including shedding parasites.
I've seen Bass blow up a frog and clear the water, but not multiples.

I could see some type of flying insects kissing the top of the water and could hear plenty of frogs for natural baits. Sure wish I had my dang poles.

Sometimes schooling bass will get airborne, but usually confined to small school sized area, but there might be multiple schools depending the size of the lake/pond.

They freak me out Ed, I'll be in a quiet place fishing for Smallmouth, and then KERSPLASH, it sounds like someone threw a cinder block in the water right behind me.
When I turn for a quick glimpse, it's a Carp.

Yep, agree with the others...usually carp. But have seen many big bass jump also

Hehe - they sure make a noise, don't they. I'll have to catch one of the DNR's and see what they stocked it with and ask about the carp. Will let you all know.
