What you see growing up is a fruiting body that produces spores for a new generation. The mycelium, the root like structure that spreads underground, is what they grow from, sort of like the branches of an apple tree. Probably doesn't hurt the mushroom, but you may as well cut it off since you're going to trim it to eat it.
My wife and I are avid mushroom hunters. We have taken a couple classes (guided hunts). Really enjoy it! What we do, as it was suggested by our instructor, is if the mushroom is past the point of harvest we will break up and broadcast the cap in the area it is growing. Helps the spores to spread out in that area. Iโve seen from year to year the improvement in harvest in an area after this practice.
